Welcome back to the Broke Student Special! This time on the menu, I’m bringing you one of my absolute favorite dishes from where I call home – Okinawan Taco Rice.
For this one I really tried to find a recipe that was as close as I could get to traditional, being from my favorite restaurant – King Tacos, so I did use a recipe; And for the first time in probably 9 months, I cooked.
So without further ado, let’s dive into it!

To cook:
- 500g beef mince – $6.98
- 1 packet taco seasoning – $0.97
- 1 tbsp soy sauce – $2.94
- 150ml bonito stock, chicken stock or water – (I used chicken broth) – $1.98
- 8 cups warm, cooked short-grain rice – $8.98/5lb
For toppings:
- Shredded cheese – $2.24
- Finely shredded iceberg lettuce – $1.97
- Tomatoes, halved and sliced – $2.48
- Mild salsa – $2.82
- Mayonnaise (because I really like it with my taco rice) – $4.38

Altogether this meal is $35.71. According to Liaw, this dish can serve six, according to Joey and I, it can serve two (three or four at most), truthfully though it just depends on how big you want your portion to be and how much the recipe calls for. This recipe happened to really only be enough for Joey and me, but in all fairness, we were starving when I made it, I’m talking first meal we had all day.
That being said, here’s our ratings…
Fayth rates it 8/10 stars and Joey gives it 7.5/10 stars.
Here’s what Joey had to actually say about it: “I think it’s delicious, but if I were the one to cook it I’d probably mix the rice and cheese in with the meat to add a little more lasting flavor and get the cheese evenly melted.”
