Hello, my lovely readers!
Yes, you guessed it, I am back, and for the remainder of this year, (and maybe even next year if all goes well) I’d like to bring to you a little something that I like to call… The Broke Student Special. The Broke Student Special is going to be a column in which I give you recipes, hopefully, every week, that are affordable for the average low-income student as well as delicious and completely Fayth-approved.
(I’d like to preface this with the meals are all being made by myself and my lovely boyfriend, Joey. Both of whom are not chefs in any way, shape, or form!)
So without further ado, our very first meal is going to be a Spam Musubi Bake. It’s very similar to a sushi bake but with spam.
The recipe along with the cost of each item:
- Two cans of spam: $3.98/can
- 6 bowls of Bibigo cooked sticky rice: $13.49/12 pack at Costco
- Soy Sauce: $3.58
- Mirin: $3.12
- Sugar: $2.75 for a 32oz bag
- Furikake Seasoning: $5.00
- A baking pan
Instructions:
- Heat rice according to packaging and spread evenly across the bottom of the pan. Depending on your pan size it will be .5-1.5 inches tall, maybe even 2 inches in a really small pan.
- Then sprinkle the furikake seasoning over the rice until evenly covered.
- Cut 2 cans of spam into small cubes then sear in a frying pan.
- Once the spam is evenly seared, put them in a bowl and place them off to the side to let the pan cool.
- Now while the pan is cooling down, make a glaze, in a bowl, with equal parts mirin and soy sauce, with about a teaspoon of sugar, and mix the three together.
- When the pan has cooled down, put it back on the stove at medium heat and toss the spam back on the pan, and then toss the glaze over the spam.
- Continuously stir the glaze and spam around until the glaze is no longer liquid and is completely stuck to the spam.
- Pour that delicious spam onto your rice, and once again, spread evenly across the pan till evenly coated.
- Finally, put that lovely rice spam concoction into the oven at 350 degrees for around 15 minutes, or until you get tired of waiting and really just want to dig in.
- Ta-Da, you have yourself a Spam Musubi Bake.
That wasn’t so hard now was it? The total cost of this meal is $31.92 and can serve around 4-6 people; assuming it is serving 6 people, the cost comes down to $5.32 a serving. Not too bad if you ask me. Now, a genuine question you might be asking is “Is it good though?” If you ask me, yes, totally worth the price, and on a scale from 1-10, I’d give it a solid 7.5. It’s easy, it’s yummy, and it’s cheap which is perfect for me considering I can’t cook, I’m picky, and I’m 100% broke.
If you don’t want to listen to me though, Joey’s roommate, Michael Vomvolakis, also had a taste, and here’s what he had to say about it: “It was a lot better than I thought it would be. I would certainly eat it if I was short on time or money, but I also think it could be better if the spam was swapped out for something else, like chicken.” Thank you, Michael!
